San Nicola

This name comes from Campochiarenti church, that is the oldest one in San Gimignano surroundings (AD 998), and to remember our cousin Nicolas who was killed in the terrorist attack in Nice (France) July 14th 2016.
The first wine who had on the label this name was the Chianti Colli Senesi 2016, followed by 2017. Then we used this name for our Riserva 2017 and now we will use San Nicola by itself for our special selection, long aged in big oak barrels before bottling. The first vintage using the new label is 2019.
This wine follows Chianti Colli Senesi Riserva production rules increasing the aging time for our best selected regional varieties.

 

This wine is produced using only autochthonous grapes of Tuscany: 85% is Sangiovese, 15% is shared between Colorino, Canaiolo, Ciliegiolo, Mammolo, Foglia Tonda selected during the harvest. Fermentations are done in traditional way with delestage and pumping over , then are followed by a long maceration time in order to extract the best tannins from the grape seeds, and polyphenols and anthocyanins from the grape skins. At the end the blend is done and ages in big oak (botte grande) for 36-40 months until the bottling, that is followed by a refining in bottle for 6-12 months.

The clarification is naturally done without using chemical products, so the wines are natural and cannot cause any allergy problem. The use of natural fining process could result in a small deposit in the bottle during aging, that shows how much the wine is natural but also that it is still alive and can evolve towards the peak during the aging.

Campochiarenti San Nicola has a round and smooth body, with a big structure that grants an impressive longevity.
